Mānuka Honey Roasted Carrots
Level up your Sunday Roast with a new take on roast carrots. The whole family will love the sweetness of this dish, and it’s guaranteed to be a crowd pleaser.

- 2 teaspoons MGO 30+ Mānuka Honey
- 2 bunches dutch carrots
- 1/2 cup chopped parsley
- 2 tablespoons extra virgin olive oil
- 1/4 cup goats cheese
- 2 tablespoons chopped pistachios
- Sprinkle salt & pepper
Preheat your oven to 180 degrees fan forced, line a large tray with baking paper and spread the dutch carrots out evenly. In a small bowl mix the extra virgin olive oil, Mānuka Honey, salt & pepper. Pour half of this mixture over the carrots and save the rest for later.
Roast carrots for 15-20 minutes or until golden.
Transfer to a serving plate and pour over the remaining olive oil and Mānuka Honey dressing.
