Lunchbox Friendly Muffin Recipe

This back-to-school snack will fast become a regular in your household, and a favourite among the family. They are delicious, soft and naturally sweetened with our Mānuka Blend Honey MGO 30+. They are also gluten-free, dairy-free, egg-free and nut-free, so they make the best lunchbox snack for kids and adults alike.

Nutritionist, Naturopath and recipe developer Casey-Lee from @livelovenourish created this recipe to celebrate the start of the school year and to help busy parents fill their kids lunchboxes with delicious and healthy snacks. We hope you love this recipe!

Ingredients

  • 2/3 cup overripe mashed banana
  • 1/2 cup plant based milk
  • 2 tbsp coconut yoghurt
  • 2 tbsp Mānuka Blend Honey MGO 30+
  • 1 tsp lemon juice
  • 3/4 cup buckwheat flour
  • 1 tbsp coconut flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 cup sugar free chocolate chips (optional)

Method

In a mixing bowl combine banana, milk, yoghurt, Comvita Mānuka Blend Honey MGO 30+ & lemon juice.

Add buckwheat flour, coconut flour, baking powder & cinnamon. Mix to combine.

Spoon into a lined muffin tray. Bake in a pre-heated moderate oven for 15 minutes or until cooked through.
