Traditional Turkey with a Twist

Manuka honey is a wonderful addition to your traditional Turkey recipe!

This recipe was developed by Jacqui Toumbas from @jacquitoumbas Manuka honey adds that special something that you are sure to enjoy!


  • 1 turkey (I used a 3.5kg turkey)
  • 2-4 rosemary sprigs
  • ½ lemon
  • 10 fresh sage leaves
  • 4 tbsp butter (about 60g)


  • ¾ cup Manuka Honey
  • 100g butter
  • 4 cloves garlic
  • 5 fresh sage leaves, chopped finely
  • Salt & pepper


1 Prepare the turkey by bringing it to room temperature.

2 Preheat the oven at 170°C fan forced and ensure the racks are set up for the size turkey you have.

3 Generously season the turkey with salt and pepper.

4 Stuff the turkey with half the lemon, rosemary sprigs and sage leaves.

5 Place in the oven for 20 minutes.

6 During this time, prepare the glaze over medium heat. Combine all the ingredients and bring to a simmer. Take off the heat once combined well.

7 After the first 20 minutes, turn the oven down to 160°C fan forced and glaze the turkey with the prepared glaze.

8 Repeat this glazing process every 20 minutes for 2 hours - or till your size turkey is cooked through.
