Lemon and Mānuka honey loaf

ROHI RĒMANA ME TE MĪERE MĀNUKA - LEMON AND MĀNUKA HONEY LOAF.

This loaf is so quick to whip up with the delicious flavour of rēmana (lemon) and mīere mānuka (mānuka honey) by @Comvita_AU

Eat it plain, slathered with butter and mānuka honey or drizzle with white chocolate and decorate with in-season fruit.  

TE ROHI - THE LOAF 

  • 165g pata kūteretere (softened butter) 
  • 3/4 C huka one (caster sugar) 
  • 3 Tbsp mīere mānuka (manuka honey
  • 2 tsp wanira (vanilla) 
  • 1/4 tsp tote (salt) 
  • 3 hēki iti (small eggs, size 6) 
  • 2/3 C miraka tepe (yogurt, this can be swapped for sour cream too)
  • 2 C puehu parāoa noa (plain flour) 
  • 1 1/4 tsp pēkana paura (baking powder) 
  • 1/2 tsp pēkana houra (baking soda) 
  • Kiri rēmana pirahirahi (finely grated lemon zest of two lemons) 

 

Method

  1. Preheat oven to 150°C
  2. Add pata kūteretere, huka one, mīere mānuka, wanira and tote to a bowl. Whip on high  for 5 minutes until light and fluffy.  
  3. Add a hēki and whip for 20 seconds. Add the second hēki and whip for 20 seconds. 
  4. Stir the third hēki in to the miraka tepe until smooth.  
  5. Add half of the dry ingredients into the whipped butter and whip on low for 15  seconds. Add half of the yogurt mix and mix for 15 seconds. Add the 2nd half of the  flour mix and mix for 15 seconds. Finish with second half of the yogurt mix. 
  6. Grate in the kiri rēmana and fold it through.  
  7. Add to a 12cm x 22cm loaf tin lined with baking paper. Bake in oven for 55-60 minutes. If it needs a bit more, turn off the oven and leave the loaf in for 5 more  minutes.  

 

MĪERE RĒMANA ME TE MĪERE - HONEY AND LEMON SYRUP 

  • 2 Tbsp mīere mānuka (mānuka honey
  • 1/4 C wai rēmana (lemon juice)

 

Method

  1. Stir the mīere mānuka and wai rēmana together. Once the loaf is cooked, poke holes  all over the loaf and drizzle over the syrup. Leave to cool and soak in the all flavour. 
  2. If you want to decorate it further, I drizzled over 80g melted white chocolate, added  cherries, slices of lemon and orange and finished with thyme leaves from my garden.
